Avocado Popsicles

Avocado Popsicles

Ok I'm going to be honest with you, I've been on this "popsicle high" lately! Being from Florida and the fact that the weather has been so HOT lately, having a popsicle is the only thing that I've been thinking about to cool off!

I love avocado and bananas! Mixing these together makes these popsicles taste like rich ice cream! And with each popsicle boosting only 122 calories, it's packed with protein fiber and some good healthy fats! Let's make some Avocado Popsicles shall we =)

Total time:  4 hours, 10 minutes
Prep time: 10 minutes
Makes 4 servings, 1 pop each

Ingredients
Avocado Popsicles

What do I need?
- 1 ripe medium avocado, cut into chunks
- 1 ripe medium banana, sliced
- 1/4 nonfat plain Greek Yogurt
- 1 tsp. finely chopped lime peel
- 1 tsp. fresh lime juice
- 1 1/2 tsp. raw honey
- 1 to 4 Tbsp. Water

Preparation:
Place avocado, banana, greek yogurt, lime peel, lime juice, raw honey, and 1 Tbsp water in blender. Cover and blend until smooth. Add additional water until you get to your desired consistency.

Pour avocado mixture evenly into ice pop molds and freeze for at least 4 hours, or until set.

How to Get Rid of Your 4 BIGGEST Exercise Excuses

Everyone loves a beautiful body that is free from excess fat and unsightly stretch marks. For this to happen, there should be some exercises that ought to be incorporated in your routine. This is sometimes hard because most people find excuses for doing exercises not realizing that it’s their own body that will not benefit from the many advantages associated with doing exercises. So for you to ensure that you do not keep making up excuses for doing exercise, it is important to remember the many benefits that come along with doing exercises. Instead of just hoping to do exercise when you find some time, consider scheduling it! The same way you would not like to miss an important meeting, ensure that you put the same weight on your scheduled exercises and you will find that excuses will actually not be an option.

One of the excuses that people use is that they are too tired to exercise. Well, we usually are also too tired to beat that deadline on our projects but we do! That same intensity should be applied on doing exercises. It is evident that life is usually exhausting and we all need some energy that will get our blood flowing and muscles moving. In this case, you should drink Shakeology which actually gets to provide your body with the much needed fuel that your body requires to operate at optimal speed. Another big excuse for doing exercises is that you need to first lose some weight. There are many ways one can lose weight and this is usually through brisk walking, hiking or biking. A work out at home is also ideal and this is usually with the use of Beachbody fitness programs that are effective if and when they are followed to the letter.


Another one is when someone says that they are too hungry to exercise. It is evident that one cannot exercise on an empty stomach so when this happens, you should not just postpone the whole idea of exercising altogether. Getting Excited to Backpack Asia!

I am a backpacker traveler, which means I basically travel only with what is in my backpack. I don't ever check in any luggage. I only bring the necessities, and purchase what I need as I go. So the question is "well, what do you pack then?". Ha ha, I will post that blog right before I leave =).

I will be leaving for South East Asia by the end of August, and I cannot tell you how excited I am! 

As far as preparation, I mostly read a lot of Lonely Planet travel books, and use the internet to do my research. The type of travel that I do is called independent travel. I prefer to plan things on my own, do things as I please, and create my own itineraries. Honestly, I don't plan much, I just go! =) I also prefer to choose my own volunteer travel opportunities, so I know that my donations go straight to the cause. There are plenty of places to do volunteer work abroad, and I enjoy doing this to help the local communities, and to learn while I'm traveling.

My first backpacking trip that I planned was in 2001 when I backpacked Europe for about a month, which is very short by "backpacker" standards, but this was my first backpacking trip, and I learned a lot from it. I did everything myself and planned the trip for me and a friend. No tour guides, no fancy hotels, no middle man fees. Now I know that a lot of people prefer to use travel agents and tour companies because it is very convenient, and trust me, I like convenience, but by doing that, you are limited to seeing a lot of things when using a tour company. Most of these companies only take you to the tourist areas, and I am not interested in that, I am interested in the local people, local food, and local activities.....that's why I travel, otherwise I might as well just stay home and be comfortable. Bottom line, I like going "off the beaten path", getting lost in a different part of the world is something that I am comfortable with, and I love the challenge of survival =). 

I will be flying into Manila, Philippines and luckily I still have many relatives there. I will be meeting with my cousin and he will be with me for most of my stay in the Philippines (roughly 2 weeks). I plan to visit the Banaue Rice Terraces which is located north of Manila. These rice terraces are considered a "Wonder of the World" and I will be doing 30 burpees there as part of my 100 Wonders of the World Burpee Challenge. From there I will be going south to Boracay and Palawan to visit the most beautiful islands of the Philippines, then flying out to Bangkok Thailand.

I will not have a certain itinerary that I will follow, I will just be going with the flow. After Manila, I will be on my own as my cousin will not be with me when I fly to Thailand. But that's the beauty of backpacking, you meet so many people, and so really there is never a dull moment. Other places that I plan to visit are Laos and Burma. If I happen to stay longer, than I will be adding Vietnam, Cambodia, and Malaysia. I do have a couple Obstacle Course Racing competitions (Warrior Dash World Championships in NorCal, and the OCR World Championships in Cincy, Ohio) in October, so I have to be back by Mid-October, unless I am having a blast, which I know I will, so we'll just have to see! =)

Less than 2 months is just not long enough, but I also have to be back for some races, and I also have my daughter to be with, I don't want to leave her for that long, although I know that she will be fine without me, she's one tough cookie! =). This is her last year in high school, so I need to be there for her. Once she begins college, I plan to travel for 6 months at a time.

While I'm traveling, I will still be working out at least 5-6 times per week. Heck, I have some races to train for, so I will be hitting some P90X and Insanity workouts in the backpacker huts, and visiting  gyms to stay fit while I am in Asia. Not only that, Asia is pretty mountainous, so there will definitely be plenty of places to train outdoors. I'm sure that I'll also be running a lot on the beach as well while people are having fun with their Full Moon Parties =). Oh and I will be packing up my Shakeology, you better believe that, can't leave home without my Superfoods!

3 Day Refresh - Day Three

Today was Day 3 of my 3 Day Refresh and I have to say that I feel pretty amazing! Being a person that really loves to eat, I actually thought that I was going to starve to death, but the shakes and the recipes really kept me on point! You really have to go into the 3 Day Refresh Program knowing that it will be different then your daily eating habits, unless you eat pretty clean, but even if you do, you have to adjust to the lower calorie intake especially if you have a very active lifestyle. I worked out the first two days, and decided to not do a workout on my third day. As I mentioned before in my day 1 and day 2 posts, working out is not required during this program. It is mainly focused on detoxifying your body, and helping you get a jump start on your nutrition. I used it mainly for the detox factor. The 3 Day Refresh is also a great way to naturally lose up to 5 pounds safely in only 3 days!

I will most likely be doing the 3 Day Refresh every quarter, and plan to do the Beachbody Ultimate Reset (a 21 Day Detox/Clean Eating Program) once a year.

So here goes! I woke up pretty early this morning, I guess because I've been drinking so much water! It's recommended that you drink a gallon of water every day during the 3 Day Refresh. I started my day with my 10 oz of AGUA - water =)!

And within an hour of waking up, I had a Vanilla Shakeology blended with 10 oz of filtered water, ice and a serving of fresh cut cantaloupe. I wasn't sure how this was going to taste, but I said what the heck, and it turned out pretty good!

After my tasty Vanilla/Cantaloupe Shakeology concoction, I waited about an hour before having my morning tea. Just like the past two days, I went with my Organic Green Tea (no sweetener), and I used my Dad's coffee mug. I might've went over an ounce or two because his mug is huge.

A little over an hour, it was time to take my last Fiber Sweep, I was pretty sad about that ;), at any rate, I felt accomplished! It's not just about getting fit on the outside, it's also about getting fit on the inside!

Almost two hours passes by because I was so busy coaching people online with my Beachbody Coaching Business, it was time for LUNCH!  I know what you're thinking because you're probably looking at the picture below and thinking that I am having some STARBUCKS =) Nope, I just used the cup to put my Vanilla Fresh Shake in there, "GOTCHA!!"  ha ha =). So I blended my Vanilla Fresh Shake with 10 oz of filtered water, ice, and a small banana. I also had a serving of Steamed Asparagus (because I had like a crap ton of them) and some Spinach Artichoke Hummus. It was delicious!

Lunch was pretty filling so I waited for another hour and a half, maybe two hours before having my afternoon snack. I ran some errands for a bit, and came back and had a medium red bell pepper sliced, with a side of healthy fat.....more hummus!

After my afternoon snack, I did a couple business video calls, talked to my lovely daughter on the phone and watched some TV with my Dad, all the while enjoying some Organic Green Tea.

About an hour and a half later, I started to prepare for dinner. I had my last Vanilla Fresh Shake, a Spinach Salad with tomatoes, cucumbers, lemon juice, extra virgin olive oil and sunflower seeds. I was actually stuffed lol. I think my stomach shrunk these past two days, because I had to wait a few minutes before finishing the last part of my dinner which was some Organic Vegetable Broth.

So as I am writing this blog post, I am sipping on my last Organic Green Tea beverage of the evening. It was a very relaxing day just hanging out with my parents, coaching my team online in my pajamas, and feeling blessed to be alive and healthy!

 My overall experience on the 3 Day Refresh was great! I definitely needed it, and I highly recommend it to anyone who is interested in getting a jump start into a fitness program, their nutrition, or just wants to lose up to 5 pounds pretty quick. You can also just use the program for the detox factor like did.

I SURVIVED the first day of the 3 Day Refresh and made it to the second day! =)  If you missed my DAY ONE post, you can click here to check out my blog from the first day.

Today was a little more of a challenge because I was not at home for lunch and dinner, but I managed quite well, and packed my meals to go! It is definitely much easier to do the 3 Day Refresh Program on your off days, like the weekends, or the days when you are not at work, or traveling. I know that some of you may not have the convenience of doing this program from home, so I would suggest investing in a Six Pack Bag, they are like the "Rolls Royce" of meal management systems!

Day two begins with my 10 oz of filtered water as soon as I get my butt up! This is a very important step to get your system going, don't skip it! Of course I went straight to my computer, and then drank my water =).

Just like yesterday, for BREAKFAST I drank my Shakeology within an hour of waking up. This time I had Chocolate Shakeology (with 10 oz filtered water) blended with ice. I chose to eat the fruit option a la carte instead of adding it into my Shakeo, and I chose to have a serving of fresh diced cantaloupe, it was yummy! =)

A little over an hour and it was time for my morning tea (optional). I had some Organic Green Tea like I had yesterday, and again, no sweetener used. (Stevia sweetener is allowed)

About an hour after my morning tea, my mother reminded me that we were going to church in a few, so that's when I took my Fiber Sweep, which is the digestive health drink included in the 3 Day Refresh Kit. I chugged it down, and started to get ready for church.

I also had to pack my lunch meal because my mother had to do something after church, and I didn't want to starve to death. You don't want to see me when I am not able to eat, it's not a very pretty sight  =) ha ha

2 hours later, I joined my mother and her friend after church at a Chinese Restaurant for lunch, but don't worry, remember I brought my lunch =), so while they were eating their chinese food, I was eating my lunch which was very easy to pack in a small cooler tote. My lunch consisted of my Vanilla Fresh Shake (shaken with 10 oz of filtered water), small banana, and a serving of celery sticks accompanied with 2 TBSP of hummus. You can see the photo of the Chinese Buffet that I did not take any part of =).

A little over an hour later at home, it was time for my afternoon snack! If you know me, there is one thing that I love doing, and that is EATING! So when the program says it's time to eat again, I'm like "I'm game!" What I like about this detox program is that I don't ever feel like I'm starving. If you go into this program thinking that you are going to eat like you normally do, instead of understanding that this is a detox/cleanse system, then you will probably hate it. Get your mind right, prepare yourself, and you'll be just fine! It's only 3 days =)

So anyways, for my afternoon snack, I steamed up some kale, and sliced some avocado to make sure to get some healthy fats in. The kale was seasoned with some Himalayan Pink Salt. Don't forget to keep drinking water. The goal is one gallon of water per day!

Moving right along, another hour passes, and it's time for afternoon tea (optional). I again had my Organic Green Tea.

Shortly after my afternoon tea (30 min), I decided to do my workout of the day which was just a simple Insanity Asylum Relief Stretch workout. FYI, you do not have to exercise during the 3 Day Refresh, I just choose too, but I don't recommend doing any extreme-type of workouts.

I managed to break a little sweat during my stretch workout which was about 20 minutes. About an hour and a half after my workout, my brother swings by to pick me up to attend a church dinner. I'll have you know that this dinner is hosted by a Filipino Church group, and there will be a lot of filipino food there that is definitely NOT part of the 3 Day Refresh Program =), but again....I remain focused and committed to the program and make sure that I pack my dinner in a small cooler, and meet up with my parents at the church event.

My dinner consisted of my Vanilla Fresh Shake (with 10 oz of filtered water, no fruit added), Steamed Asparagus drizzled with Extra Virgin Olive Oil and Slivered Almonds, and a cup of Organic Vegetable Broth with parsley.

If you look at the photo above, you can see a little bit of filipino food that was at the table. Although it all smelled really good, and trust me, it was very tempting, I didn't give in, and I stayed committed to my 3 Day Refresh =). I've got GOALS people! Don't you??

Back at home after dinner, my brother Fermin and his wife Jasmine hung out and had some evening tea (Organic Green Tea) with me to finish the night off strong. We had a few laughs as you can see =) There is nothing better than family time!
